This Mexican Quinoa Bowl from Good To Go was one of my favorite dehydrated meals I’ve tried so far. It comes with butternut squash, black beans, and quinoa in a really tasty Mole Poblano sauce. The Mexican Quinoa Bowl was full of flavor and had a good amount of squash and black beans in it as well.

Weight: Single Serving – 3.4oz
Taste: This was one of my favorite dishes from Good to Go. The Mole Poblano sauce was great paired with the quinoa and butternut squash. It had a slight sweet taste to it as well that made the flavor a bit more interesting I think.
Re-hydrate Time: The directions say to hydrate for 15 min. But I was at around 7,500 ft. So I let it sit a little more. But because it was just quinoa being re-hydrated and not rice it cooked pretty fast. And after 17 min, everything was fully re-hydrated.
Overall: I would love to have this meal again. And I would definitely take it out on the trial with me. The Good to Go Mexican Quinoa Bowl was a different dish than I’ve tasted in backpacking meals before. I really liked the quinoa mixed with the black beans and butternut squash. I feel like the ingredients were quality and the flavor was great.
