Backpackers Pantry Vegetable Lasagna 2020 Review by The Good Ride
We tried the Backpackers Pantry Vegetable Lasagna on a recent backpacking trip. It was not what I was expecting really. If you are expecting a cheesy, tomato based Lasagna this isn’t the Lasagna for you. If you want a vegetable pasta with Lasagna noodles, then maybe you will like this one. This meal comes with 340 calories per serving (it is a 2 serving package) and 19 grams of protein per serving as well.

How This Review Happened: We spent our precious Good Ride dollars to purchase this and test it out.
Weight: 7 ounces
Taste: I wasn’t super impressed by the flavor of the Vegetable Lasagna. It was a little bland and lacked all the yummy Lasagna goodness I was expecting. It was more like having a lightly flavored vegetable based pasta.
Re-hydrate Time/Preparation: We prepared this according to the directions, and everything re-hydrated just fine. There isn’t much that would be difficult to fully re-hydrate in the package other than the noodles. It says 15-20 min for re-hydration time. We cooked it for 17 min at just under 10,000 ft.
Overall: If you are looking for a vegetarian meal option that gives you a good amount of protein, maybe you will like the Backpackers Pantry Vegetable Lasagna. It has a light flavor that isn’t overpowering. If you are hoping for a cheesy rich Lasagna taste, then this isn’t the option. But if you want a lighter vegetarian meal, then you might be happy with this one.
